12 At Home Breakfasts

Well, one good thing to come from this awful situation is you probably aren’t commuting and hopefully for some of you that means you’ve got a little more time to spare in the morning. For me, that time is 10000% going on better breakfasts haha 🙂
Here’s a few ideas – nothing too crazy or time consuming, just easy peasy bits that are slightly more indulgent that a banana on-the-go!!
(1) BAKED EGGS aka Shakshuka
Tomato sauce with an egg in the middle. Dippy soldiers optional 😉 Just need a frying pan and a lid. Recipe here (well there’s two recipes in that link but one of them is my shakshuka!)

(2) SWEET OMELETTE aka flourless pancake
Trust me, it’s so good. My favourite version at the moment… I spread a layer of peanut butter over the omelette, add some sliced banana & then fold it in half so it melts. Also fab with berries, yoghurt, nuts, whatever you’ve got in your cupboard. Don’t skimp on the sweetener/sugar included in the recipe – click here.

(4) PIZZA HASH BROWNS
Bake your hash browns, top like a pizza and grill!

(5) BREAKFAST PIZZA WRAP
Click on the pic below for some instructions but this idea is fab for using whatever you’ve got in your cupboard! Even crack an egg in the middle & stick it in the oven/under the grill for a few mins.
(6) HOMEMADE “MCDONALDS” MCMUFFIN
This caption includes a little run through of the ingredients I used to make mine. If you can’t get your hands on sausage patties, remove the meat from sausage skins and shape into patties yourself. I fry mine (with a tiny bit of oil spray) but you could also grill.

(8) INDULGENT DIPPY EGGS
A few different ideas for soldiers:
- cheesy toast
- sausages
- slices of pizza toast
- sweet potato
- asparagus wrapped in bacon – fancy!

(9) DIPPY PANCAKES
I’ve got quite a few pancake recipes on here but this is the one I’d recommend for a semi quick, weekday version. Make them slightly smaller so you can dip them into some Sweet Freedom, honey, whatever you’ve got. Click here for the recipe

(10) HOMEMADE GRANOLA
Basically mixed a load of nuts together, add a bit of honey/maple syrup/ whatever you’ve got and bake! Honestly so so soooo easy and perfect for using up the random ingredients in your cupboard. Have a look at my recipe here (this one is Ferrero Rocher but its super easy to adapt to whatever you’ve got).

(11) JAMMY DODGER FRENCH TOAST
Yep, you read that right. Sandwich two slices of French toast together with jam and helloooo! Can you resist?! Recipe here

(12) SWEET POTATO MUFFINS
Warning – these are addictive. To the point where we’ve had to ban them in my house because they’re practically all eaten within 1 second of leaving ht oven. My photo is shocking but these muffins are not!! Recipe here. Suitable for freezing too!
