Gluten Free, Vegan Nacho Cheese!!

Ever since we moved into our new house, Saturday night has become Nacho night. We’ve had a different combination of toppings every time but one thing I’ve been lacking throughout is a good cheese topping! I’ve been wanting something like the cinema nacho cheese dip so I got creating…

Turns out its super duper easy peasy. Takes a few minutes. AND it doesn’t look remotely vegan, if you know what I mean… melted vegan cheese definitely looks ‘different’, doesn’t it?!

And the real test: my boyfriend eats both gluten & dairy. I made a version for myself and then a totally separate, gluten & dairy filled version for him. He couldn’t tell which was which!!!! Result.

THE NACHOS:

Let me introduce you into my new best friend. Mister Free’d. If you haven’t tried these before, you need to.

This is especially true if you’re dairy free/vegan as their Cheezie flavour is like nothing else. This was the flavour I chose to use with my vegan nacho cheese.

RECIPE:

I bet you’ve got all of these ingredients in your cupboard!!! Honestly takes 5 mins, max. Game changer for my Nacho Saturdays!!!

Gluten Free, Vegan Nacho Cheese!!

Ingredients

  • 2 Tbsp butter - I use Dairy Free Flora Spread
  • 2 Tbsp gluten free plain flour
  • 150 grams dairy free cheese
  • 250 ml milk of your choice - Almond/Soya/Oat works best
  • Generous sprinkle of salt and pepper

Instructions

  • Add the butter to a pan. Heat on a low-medium temperature until its melted.
  • Add the flour and whisk until fully combined. Stirring continuously, allow it to bubble for about 30 seconds, to stop the flour from tasting grainy.
  • Add the milk and whisk again until fully combined.
    >If you’d like the mix to be thicker, leave to simmer for a couple of minutes. If you’d like it to be thinner, add a little more milk and stir until incorporated. It should be the consistency of thick gravy!
  • Take the pan off the heat. Add 1 small handful of cheese and stir until incorporated. Repeat for the rest of the cheese.
  • Once all the cheese is melted, add salt and pepper to taste.

Notes

NOTE: Whilst the cheese sauce is cooling down, it will thicken up. If you’d like it runnier, just add more milk and stir, stir, stir!
