250mlmilk of your choice - Almond/Soya/Oat works best
Generous sprinkle of salt and pepper
Instructions
Add the butter to a pan. Heat on a low-medium temperature until its melted.
Add the flour and whisk until fully combined. Stirring continuously, allow it to bubble for about 30 seconds, to stop the flour from tasting grainy.
Add the milk and whisk again until fully combined.>If you’d like the mix to be thicker, leave to simmer for a couple of minutes. If you’d like it to be thinner, add a little more milk and stir until incorporated. It should be the consistency of thick gravy!
Take the pan off the heat. Add 1 small handful of cheese and stir until incorporated. Repeat for the rest of the cheese.
Once all the cheese is melted, add salt and pepper to taste.
Notes
NOTE: Whilst the cheese sauce is cooling down, it will thicken up. If you’d like it runnier, just add more milk and stir, stir, stir!
