Gluten Free Cheese and Broccoli Pasta ‘n’ Sauce

Why have I waited so long to create a recipe for Gluten Free Cheese and Broccoli Pasta ‘n’ Sauce???!! Its unbelievably easy to make, cheap and tastes just like the real thing.
How do I know? I cooked up my recipe as well as the “real thing” so my non-gluten free family could try them at the same time… and they’re identical!!!!!!! I think mine has a little more sauce, but I have done this on purpose because its the BEST. You can increase the amount of pasta/reduce the other ingredients if you want a drier Pasta ‘n’ Sauce.

Ingredients
(1) Gluten free pasta
- My brand of choice: Garofalo!!! Always, always always. I only ever use Garofalo because it cooks perfectly and there is absolutely no compromise on taste. No one ever guesses its gluten free.
- My shape of choice: Penne. You could use anything you like but I’ve gone for penne here because itβs the closest shape to the “real” Pasta ‘n’ Sauce.

(2) Milk – your choice, I go for semi-skimmed
(3) Cornstarch – DO NOT LEAVE THIS OUT. It serves a purpose… it thickens the sauce and it prevents the milk from looking curdled when its boiled.
(4) Broccoli – you only need a tiny bit to get the taste and look.
(5) Cheese: I think the ratio of cheddar to parmesan I’ve used below achieves the closest taste but you could swap for anything you fancy. Just make sure you stir it in OFF the heat to prevent the cheese from going oily.
(6) Seasoning:
- Onion and Garlic granules – you need these! You could swap for fresh but I use granules to make it quick and easy
- Turmeric – this is just for colouring so you can leave it out. If you use it, use the TINIEST pinch, stir it in and see what the colour is like. If you want it to be a bit more yellow, add a little bit more.

Gluten Free Cheese and Broccoli Pasta ‘n’ Sauce
Ingredients
- 80 grams gluten free pasta - always Garofalo for me
- 100 ml milk
- 1.5 tsp cornflour - DONT LEAVE OUT – details in ingredients section of the blog post above
- 1 floret of broccoli
- 15 grams of cheddar
- 10 grams of parmasan
Seasoning
- 1/2 tsp onion granules
- 1/2 tsp garlic granules
- TINY bit of turmeric - this is mainly for colour – see ingredients list above
Instructions
- Add the cornflour to the milk and mix together.
- Chop your broccoli into tiny pieces.
- Add the milk and 300ml* of water to a pan and bring to a simmer.
- Add the pasta, broccoli and seasoning to the pan.Keep simmering until the pasta is cooked and the water has evaporated, leaving a thin sauce (it'll thicken as it cools). >As with the "real" Pasta 'n' Sauce, you will need to stir the pasta occasionally to make sure it doesn't stick to the bottom of the pan>If the pasta hasn't cooked but the sauce is already thick, just add a dash more water and keep simmering until its cooked.
- Remove the pan from the heat, add the cheese and plenty of salt and pepper and stir together until the cheese has melted. >Do not skip the salt and pepper!!!
- Chop the pieces of pasta into halves to make it look like Pasta 'n' Sauce! >If you're sauce still is a little thin, just leave it to cool a little and it will thicken!
- EAT!!!!!!!
