Gluten Free Pancake Traybake: Apple Crumble Flavour

Ingredients

Pancake

  • 250 ml milk - - if you're dairy free, use something full fat like soya
  • 200 grams self raising flour
  • 1 tsp baking powder
  • Pinch of salt
  • Dash of vanilla essence
  • 1 egg

Apple toppings

  • 4 apples
  • 2 heaped tbsp of butter/spread
  • 3 heaped tbsp of light brown sugar/whatever you’ve got
  • 2 tsp cinnamon
  • 2 tsp cornstarch

Instructions

Apple Topping

  • Cut the apples into slices.
    > I like them to all be slightly different thicknesses so that some go really soft and some stay crunchy
  • Add the butter to a pan and melt
    >Don’t allow it to burn
  • Add the apple to the butter and give it a good mix around. Leave the pan on a medium heat, stiring every 30 secs, until the apples are just starting to soften. Takes about 3 mins.
  • Add the rest of the ingredients to a mug/jug. Add 75ml of water and mix together and much as possible.
  • Add the ingredients in the mug to the apples.
  • Leave on a low-medium temperature for another 1-2 mins, so the sauce it’s generating has thickened to a syrup. Set aside

Pancakes

  • Preheat your oven to 180oC
  • Add the egg, milk, salt and vanilla to a bowl. Whisk until smooth.
  • Add the flour and baking powder. Whisk until smooth.
  • Line a baking tray/casserole dish/cake tin with baking paper.
  • Pour the mix into the tin and place into the centre of the oven for 13 mins.
  • Remove the pancake from the oven, pour the apple mix over the top and return to the oven for 7 mins.
  • Remove from the oven, leave to sit for 3 mins and then slice up and eat!!
  • Tip: it’ll hold its shape really well, so if its easier, lift the baking paper and pancake out of the tin and slice on a chopping board.

Notes

Tin options:
*22-25cm circular cake tin OR *Approx. 20 x 30cm casserole dish/baking tin.
*If you're using something smaller, don't use all the mix (you could save it to make traditional pancakes or put it into another dish and bake two!). The mix should only sit approx 1cm high in the tin. Any higher and it won't produce such a fluffy pancake!
