A super simple recipe for gluten free egg fried rice so you can make the takeaway classic at home! Easily adaptable to anything you've got in the fridge too!!**Check out my Instagram highlight "Egg Fried Rice" for a cook-a-long video on how to make this!
1tspsesame oil - don't leave this out!!! essential ingredient :)
Sprinkleof spring onion - optional
For special fried rice
Handfulof raw/cooked meat - e.g. 3 prawns or half a chicken breast
Handfulof raw/cooked veg - frozen peas & small cubes of cooked carrot is the traditional option but more ideas in the "special fried" section above
Instructions
Start by cooking your rice as per the instructions on the packet. >Personal preference on how to cook rice: Boil a pan of water, add the rice, reduce to a simmer for around 7-10mins until soft.
Once cooked, drain the rice and run under cold water to stop it cooking. Set aside.
Beat your egg in a bowl. Set aside.
Add the gluten free soy sauce, sesame oil and spring onion to a frying pan. Heat the pan to a medium-high temperature and leave for 20 secs to allow to onion to soften.
If you're using raw meat/fish, add that to the pan and cook through. >I recommend chopping the meat/fish into small pieces!
Add the rice and any raw/cookedveg or cooked meat/fish you'd like to use to the pan.>Best to cut these into small chunks too!
Give it a good stir and cook for a few mins until it has warmed through.
Make a well in the middle of the frying pan. Add the beaten egg into the well.
Don’t stir - just leave it to cook slightly!! Once the edges start to cook (like my picture - or like an omlette!), stir the egg in the well until its cooked completely.>Don't mix in the rice at this stage but don't worry if a few bits get in the egg!
Once the egg is cooked, mix everything together, breaking up the egg with your spoon/spatula.>Don't worry about being delicate here, just go for it and get mixing!!!
Press the egg fried mix into the pan a little, so it gently "fries" the rice. You only need to do this for a few mins.
Taste and add more sesame oil or gluten free soy if you'd like to.
